CHEESECAKE TIME - Honey & Lemon Cheesecake

There is no doubt that cheesecake is one of the most popular desserts. Traditionally, they are served at weddings, birthdays, and holidays. There are many different flavours and styles of cheesecake, making them a versatile dessert. So today we share with you a Cheesecake recipe infused with the wonders of nature, Honey and Lemon.


To make a Honey & Lemon Cheesecake you will need ... an Oven.


Ingredients:

- 200g Digestive biscuits (Malt)

- 100g unsalted butter, melted

- 600g cream cheese

- 200g caster sugar

- 4 eggs

- 1 lemon, zest and juice

- 3 tbsp honey

- 1 tsp vanilla extract



Instructions:

1. Preheat the oven to 160°C (325°F) and grease a 9-inch springform cake tin.

2. Crush the digestive biscuits into fine crumbs and mix with the melted butter. Press the mixture firmly into the base of the cake tin to create an even layer. Chill in the fridge for 30 minutes.

3. An electric mixer (You may also use a whisk) can be used to beat cream cheese in a large mixing bowl until it becomes smooth. Adding caster sugar gradually will ensure that the mixture is well combined.

4. Beat in the eggs, one at a time, followed by the lemon zest and juice, honey, and vanilla extract. Mix until well combined and smooth.

5. Pour the mixture over the chilled biscuit base into the cake tin.

6. Bake for 50-55 minutes until the cheesecake is set but still has a slight wobble in the centre.

7. Allow the cake to cool to room temperature before refrigerating for at least two hours.

8. Serve chilled with whipped cream and fresh lemon slices.
